Nigerian Jollof Fonio

We turn this classic Nigerian rice dish into a delicious dish using the "miracle grain" fonio. This is a delicious side dish in place of rice, oats, or quinoa.
- 2-4 each Roma tomatoes flesh only
- 1 each onion diced
- 2 cloves fresh garlic
- 1/4 cup sunflower oil or avocado or neutral oil
- 1 cup tomato puree
- 1 1/2 tsp curry powder
- 1/4 tsp cayenne pepper
- 1/4 tsp nutmeg
- To Taste S&P

Dice the tomatoes, onions.
Heat Dutch oven over medium heat, add the oil and sauté the onions.
Once translucent, add the garlic, sautéing until fragrant.
Add the tomato puree and spices, stir to combine.
Add the cooked Fonio, stirring to combine.
Adjust for seasoning.
