We turn this classic Nigerian rice dish into a delicious dish using the "miracle grain" fonio. This is a delicious side dish in place of rice, oats, or quinoa.

Equipment

  • 1 Dutch Oven or large sauce or medium stock pot (with a fitting lid)

Ingredients
  

  • 2-4 each Roma tomatoes flesh only
  • 1 each onion diced
  • 2 cloves fresh garlic
  • 1/4 cup sunflower oil or avocado or neutral oil
  • 1 cup tomato puree
  • 1 1/2 tsp curry powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp nutmeg
  • To Taste S&P

Instructions
 

  • Dice the tomatoes, onions.
  • Heat Dutch oven over medium heat, add the oil and sauté the onions.
  • Once translucent, add the garlic, sautéing until fragrant.
  • Add the tomato puree and spices, stir to combine.
  • Add the cooked Fonio, stirring to combine.
  • Adjust for seasoning.
  • Enjoy!
