Nigerian Jollof Fonio
We turn this classic Nigerian rice dish into a delicious dish using the "miracle grain" fonio. This is a delicious side dish in place of rice, oats, or quinoa.
Equipment
- 1 Dutch Oven or large sauce or medium stock pot (with a fitting lid)
Ingredients
- 2-4 each Roma tomatoes flesh only
- 1 each onion diced
- 2 cloves fresh garlic
- 1/4 cup sunflower oil or avocado or neutral oil
- 1 cup tomato puree
- 1 1/2 tsp curry powder
- 1/4 tsp cayenne pepper
- 1/4 tsp nutmeg
- To Taste S&P

Instructions
- Dice the tomatoes, onions.
- Heat Dutch oven over medium heat, add the oil and sauté the onions.
- Once translucent, add the garlic, sautéing until fragrant.
- Add the tomato puree and spices, stir to combine.
- Add the cooked Fonio, stirring to combine.
- Adjust for seasoning.
