- 1 straight sided skillet with lid

Ingredients
- 1 lb Fresh or Frozen Medium Shrimp – peeled and deveined
- 1 1/2 tsp Jerk Seasoning – or blackening seasoning
- 1 Tbsp Neutral Oil – I prefer Clarified Butter or Avocado Oil
- 1 1/2 tsp Minced Garlic – I use garlic paste from a tube
- 8 cups Spinach Leaves – I use these whole but can be torn
- 1/4 cup Red Onion – chopped
- 1 cup Cherry Tomatoes – or plum tomatoes
Instructions
- Thaw shrimp, if frozen. You can do this by placing the shrimp under cool running water for no more than 20 minutes.
- Rinse shrimp; pat dry with paper towels and place in small bowl.
- Sprinkle shrimp with seasoning and toss to coat. Set aside in refrigerator.
- Heat oil in skillet over medium-high heat.
- Add garlic, red onion, and shrimp and sauté 2-3 minutes until shrimp is translucent.
- Add spinach, cook and stir about 1 minute or until spinach is just wilted.
- Plate and top with cherry tomatoes. Cut tomatoes in half, if you choose.
- Using your MicroPlane, garnish with freshly grated Parmesan cheese.
