Make Your Own Mayonnaise
After you learn this super simple, super easy recipe for mayonnaise you will never buy any from the store again.
Equipment
- 1 mixing bowl
- 1 whisk
- 1 kitchen towel damp
Ingredients
- 4 each egg yolks
- 2 Tbsp Dijon mustard I use Grey Poupon
- 2 Tbsp lemon juice must be freshly squeezed
- 1/2 cup neutral oil vegetable, canola, grapeseed, etc.
- To Taste Salt & Pepper I prefer white pepper as it is not visible in the mayonnaise. Cayenne is another good choice.
Instructions
- Make a donut-shape with the damp kitchen towel and rest the mixing bowl on top. This reduces the chance the bowl will slip and slide.
- Add all ingredients, except oil to the bowl. Whisk together until all is combined.
- While constantly whisking (with one hand), slowly drizzle the oil (using the other hand). Do not add too much oil at a time or your mayonnaise will not come together. Continue this until all oil is incorporated.
- Your mayonnaise will thicken as you go and when all the oil is incorporated you will have a creamy, smooth mayonnaise.
- Season with salt and pepper to taste.
