Ingredients
  

Chicken and Potatoes

  • 3-4 lb whole chicken (or pieces) bone-in, skin-on
  • ~2 lb gold potates – washed and cut into wedges
  • 1 medium yellow onion – half-moon slices
  • 1 each lemon – sliced into rounds
  • 1 cup chicken broth – homemade preferable (if using canned adjust the salt used)
  • 12 each Kalamata olives – pitted
  • As Needed fresh parsley – garnish

Lemon-Garlic Marinade (sauce)

  • 1/4 cup EVOO – I use a Greek EVOO
  • 2-4 lemons lemon zest – zest as many lemons as needed to squeeze the needed lemon juice (below) – zest before you cut and squeeze the lemons
  • 1/4 cup lemon juice – freshly squeezed (see above)
  • 12 each garlic cloves – minced – or use 12 squeezes from a tube of garlic paste
  • 1 1/2 Tbsp dried rosemary – oregano can be substituted
  • 1/2 tsp ground nutmeg – I prefer to grate a whole fresh nutmeg

Instructions
 

Brine the Chicken (Optional but preferred)

  • Do this at least one day in advance.

If Not Brining

  • Pat the chicken dry and season with salt, applying under the skin as well.

Marinate the Chicken (Optional but preferred)

    Do this the morning of your planned dinner.

    • Make the lemon garlic marinade.
    • Toss chicken with the marinade in a bowl, thoroughly coating all of the chicken.
    • Cover with plastic wrap and place in the fridge.

    Assemble and Bake

    • Arrange the potato wedges and onion slices in the bottom of an oven-safe baking dish. Season with salt and pepper.
    • Add the chicken pieces.
    • Pour the lemon-garlic sauce over the chicken and potatoes.
    • Bake, uncovered, for 45-60 minutes until chicken is thoroughly cooked and potatoes are tender. (see notes)
    • If more color on the chicken is desired, place the dish under a broiler until the color is what you want.
    • Remove from heat and add the olives.
    • Garnish with fresh parsley.

    Notes

    Potatoes Undercooked
    If the potatoes are not fully done at this point, remove the chicken pieces, and raise the oven temperature to 425°F and cook for another 15 to 20 minutes.
