Cooking Basic Fonio

Use this super simple, super quick method for cooking Fonio. Use this adding various spices flavorings to create your own custom, unique, and, super nutritious, dish.

Equipment

  • 1 small or medium stock pot with lid

Ingredients
  

  • 2 cup liquid (chicken stock, vegi stock, water, et. al.) 2 parts liquid
  • 1 Tbsp olive oil
  • 1 cup Fonio 1 part fonio
  • 1 tsp salt

Instructions
 

  • Put all ingredients into stock pan.
  • Turn heat on to medium-high. Stir to combine and dissolve the salt.
  • Bring to a boil, and immediately reduce heat to a low simmer. Cover and cook for 5-10 minutes, or until the water is absorbed and the Fonio is tender.
  • Fluff the Fonio with a fork to separate the grains.

Notes

  • Add any desired herbs or spices.
  • Serve hot, garnished with chopped fresh herbs or scallions if desired.
  • Use a 2:1 ratio of water to Fonio for a creamy consistency. Adjust to your liking.
  • You can also cook Fonio in the oven: preheat to 375°F (190°C), spread the Fonio in a baking dish, and cook for 20-25 minutes, stirring occasionally.
  • Experiment with different seasonings and spices to add flavor to your Fonio.
  • Fonio can be used as a side dish, added to salads, or used as a base for bowls and stir-fries.
  • Try adding some sautéed vegetables, such as bell peppers, onions, and mushrooms, to the Fonio for added flavor and nutrition.
  • Mix cooked Fonio with cooked chicken, beans, or tofu for a protein-packed meal.
  • Add some grated cheese, such as cheddar or feta, for an extra burst of flavor.
