No Bake Chocolate Oatmeal Cookies with Peanut Butter
This super simple, super quick mixes on the stove and then spooned out to cool – NO BAKING!The combination of chocolate, peanut butter, and oatmeal is delicious, they come together in minutes, and are great to make with kids. My mother made these with me as a child.
Equipment
- 1 4 qt saucepan
- 1 high heat silicone spatula
Ingredients
- 1 stick unsalted butter 1 stick = 1/2 cup = 4 oz = 113g
- 1/2 tsp salt
- 2 cup granulated sugar
- 1/2 cup whole milk
- 1/4 cup unsweetened cocoa powder I use Hersey's brand (4 Tbsp)
- 1/2 cup peanut butter I use creamy
- 2 tsp vanilla extract I use my homemade
- 3 cup quick cooking oats
Instructions
- Add the butter, sugar, milk, cocoa powder, and salt to a 4-quart saucepan.
- Bring to a rapid boil and let boil for 1 minute.
- Remove from heat.
- Stir in the vanilla extract and peanut butter until PB is melted and mixture is smooth, then stir in the oats.
- Drop 2 Tbsp at a time unto a parchment lined baking sheet.
- Let cool until set, about 30 minutes.
- Cookies can be stored in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks.
Notes
If you plan to store in the refrigerator, allow to cool to room temperature before placing in the fridge. This will reduce the white streaking that can occur when the cookie cools too fast.
